School Friendly Apple Cinnamon Bread


*Makes one bread pan sized loaf. I doubled this recipe for this larger loaf seen in photo*


Ingredients:


wet:

  • 1 cup of oat milk

  • 1/2 cup of sunflower seed butter (you can swap for almond butter if you don't need school friendly)

  • 2 tsp vanilla extract

  • 1 cup of maple syrup

dry:

  • 1 tsp of baking powder

  • 1/2 tsp of baking soda

  • 1 1/2 cups of gluten free all purpose flour

  • 3 tsp of cinnamon


  • 2 smaller sized diced apples

  • coconut oil or vegan butter for greasing pan

Instructions:


Preheat oven to 350F.


In a large bowl, mix wet ingredients together first either by hand or with a mixer. Add dry ingredients to the bowl and mix really well until smooth consistency. Gently mix in diced apples last. Grease a bread loaf pan with coconut oil or vegan butter and pour mixture in. Option to add extra sprinkle of cinnamon on top. Bake for 50-60 min or until knife comes out clean. Enjoy warm with butter or keep on the counter as a healthy snack throughout the day.
