*Makes one bread pan sized loaf. I doubled this recipe for this larger loaf seen in photo*
Ingredients:
wet:
1 cup of oat milk
1/2 cup of sunflower seed butter (you can swap for almond butter if you don't need school friendly)
2 tsp vanilla extract
1 cup of maple syrup
dry:
1 tsp of baking powder
1/2 tsp of baking soda
1 1/2 cups of gluten free all purpose flour
3 tsp of cinnamon
2 smaller sized diced apples
coconut oil or vegan butter for greasing pan
Instructions:
Preheat oven to 350F.
In a large bowl, mix wet ingredients together first either by hand or with a mixer. Add dry ingredients to the bowl and mix really well until smooth consistency. Gently mix in diced apples last. Grease a bread loaf pan with coconut oil or vegan butter and pour mixture in. Option to add extra sprinkle of cinnamon on top. Bake for 50-60 min or until knife comes out clean. Enjoy warm with butter or keep on the counter as a healthy snack throughout the day.
