No-Bake Energy Balls For New Moms


Adapted from original recipe here


Ingredients:

  • 2/3 cup shredded coconut (sweetened or unsweetened)

  • 1 cup old-fashioned plain oats

  • 1/2 cup creamy natural peanut butter (swap for cashew or almond for food allergies)

  • 1/2 cup ground flaxseed

  • 1 teaspoon vanilla extract

  • 1/3 cup maple syrup (more to taste if needed)

  • 1 tablespoon chia seeds (optional)

  • 1/2 cup vegan chocolate chips (optional)

Instructions:

Preheat oven to 350F and spread shredded coconut on a baking sheet evenly. Place in the oven and set the timer for 3 minutes or until coconut toasts/slightly browns. Keep an eye on it because it will burn quickly- as soon as you smell it its probably time to take it out!


Add all remaining ingredients to a large bowl, gently mixing in the shredded coconut with a spoon or mixer, adding chocolate chips last. Roll into small balls with your hands and place in the fridge for an easy delicious snack!
