Ingredients:
1 cup of any couscous (I prefer whole wheat like this)
1 chopped bell pepper
1 handful of chopped red onion
2 handfuls of chopped cherry tomatoes
Small handful of chopped basil
Small handful of chopped parsley
Handful of sliced or slivered almonds
Optional sliced greek/kalamata olives
s&p to taste
optional hummus on the side or drizzle of olive oil for serving
Instructions:
Cook the couscous following box instructions. While it cooks, chop your veggies and herbs. Set couscous aside to cool or pop in the fridge for a few minutes. Add all remaining ingredients to couscous gently tossing until everything is mixed in, adding s&p until desired taste.
I like serving with a dollop of garlic hummus and additional sprinkle of basil.
